Here is a quick write up on Fox Hill:

 

Fox Hill Meadery was established in 2007 by Jennifer and Jason Russ who moved to Marshall with their daughter

Abby from Northern Virginia. Production started shortly thereafter and commercial sales began in the fall of 2008

with Jennifer focused on sales/marketing and Jason on production.

 

Fox Hill won 2 medals in the prestigious Mazer Cup International mead competition, which judged over 130 commercial meads from around the world in 2009. This is extremely rare for a new Meadery.

 

Jason’s brewing career began as a passionate home brewer of beer. He won numerous awards for his brews, became a certified beer judge, and in time owned and operated a home brew supply store. His goal was to open a brewery. One day a friend and fellow home brewer brought a new brew for him to taste, mead. He loved the flavor and started to make his own, almost to the exclusion of brewing beer. In the process a new goal developed, open a meadery.

 

Flavor development in traditional meads depends mainly on the kind of honey(s) used. Both yeast type and aging primarily affect sweetness and alcohol content (normally between 10 and 16 percent). The addition of spices and fruit juices complicates the process. To be successful, the flavors must complement the chosen honey.

 

Fox Hill Meadery currently offers five different meads all of which are oak aged. These are –

 

·         Traditional, 13% – semi-sweet made with multiple honeys;

·         Ginger-Apricot Honey Wine (Mead), 12% - light sweetness with ginger and apricot tanginess;

·         Spice Mead, 11% – sweetness balanced by the blend of allspice, cinnamon, orange zest, and cloves;

·         Blackberry Honey Wine (mead), 11.7% – off-dry to semi-sweet;

·         Special Reserve Mead, 16% – off-dry, bold and complex.

Market Days:

Wednesday 4pm until 7pm (this is our mini market where you can pick up what you need in the middle of the week)

Saturday 8am until noon (the grand event, over 20 merchants)

This Saturday we will have a NC Meadery joining selling and sampling mead made from NC honey. In the near future Cane Creek Farms will be sponsoring tutorials in canning!

This week expect to find tomatoes and cantaloupes.

Bobby Kirk, Cane Creek Farms, has provided us with several new farmers' recipes which are on our website. Bobby has also made a personal request, " There is a small farmer in Pittsboro that lost his wife last week and is really hurting financially and well mentally as well.. Jefferey's bills and her loss has overwhelmed him.. I am going to donate part of my proceeds tomorrow to him and if anyone wants to help him also i will personally give the money to him...If it is not let me know i will keep it to myself." Any donations can be made directly to Bobby at the Cane Creek Farm booth.

The Farmer's Market Vendors page has been updated. Check out all our new farmers Pine Knot Farms, Pleasant Bee, Cane Creek Farms, Little River Ranch Farms and others. We are still seeking a cheesemaker. Any suggestions?

We will be at market tomorrow rain or shine.. We will have plenty of yellow, zucchini,and Patty pan Squash plus rutabaga,lettuce,onions,green beans,fresh eggs,Radishes,beets,New red potatoes, blueberries,cabbage,cucumbers, greens and some Squash Blooms... There is probably something i have forgotten..soon we will have butter beans and tomatoes and then okra,sweet corn and Cantaloupes in a few weeks.
