Cane Creek Farms Squash Pie
5 medium yellow squash, 1/4 cup melted butter, 3/4 cup sugar, 2 tsp lemon extract, 1 tablespoon flour, 2 eggs beaten well, dash salt, 1 deep dish pie shell.
Preheat oven to 375 Cook squash until tender and drain well mix all the other ingredients and mix well Mash squash well and mix other ingredients with it... Taste ! Pour into pie shell and cook for 25-30 minutes or until firm.. This is an easy pie to make and you can use cinnamon, nutmeg and vanilla to get another variation as a pumpkin pie etc.. I will try to have a few at the market Sat for folks to try..If any at your market need to know how to cook anything or want recipes, just tell them to ask me... Zucchini Muffins
Zucchini muffins 3/4 cup sugar 1/2 cup vegetable oil 2 Cane Creek Happy chicken brown eggs beaten lightly 3/4 cup white flour 3/4 cup whole wheat flour 2 tsp baking powder 1/2 tspaking soda 1/4 tsp salt (optional) 1/2 tsp cinnamon 2 cups Cane Creek Farms zucchini grated 1/2 cup pecans chopped Combine sugar and oil, mix well. Add eggs and following 6 ingredients, Mix well... Stir in zucchini and chopped pecans, Mix well,, Fill 18 paper-lined muffin cups Bake 20 minutes at 350 degrees.

Squash Casserole
5 good sized squash, 1 large onion, 1 stick butter, 1 box stove top dressing, 1 can water chestnuts, 1 can cream of celery soup, 1 tsp salt, dash of pepper I Love Pepper, 1 8 oz cont. sour cream. parboil squash and onions... cool.. while cooling melt 1 stick of butter .Put seasonings from stove top dressing in butter, stir and allow to set for 3 minutes. add stuffing and mix well... To the cooled squash and onions add salt, pepper,cream of celery soup,sour cream and water cheatnuts.. Using a 2 qt greased caserole dish sprinkle 1/2 dressing mix on bottom..Spoon in all the squash mixture and sprinkle remaining stove top stuffing on top Bake at 350 for 30 minutes..

Cane Creek Farms Cabbage
1 average cabbage head,1 onion ,2-3 ears corn, or some frozen corn, 3-4 slices thick bacon. Put bacon in black frying pand and cook until crisp... set aside on paper towel Chop 1/2 large head Cabbage course or chunky or as much as you like and add to black frying pan.. slice one average onion up finely and break into pieces and add to cabbage .. stir frquently just turning over and allowing to cook slowly after a few minutes add corn... Allow to cook slowly until cabbage is tender... season with salt and pepper to taste...Top with crumbled bacon.. This will go with anything for a different, good tasting dish Don't over cook!
